Easy Dutch Baby

These fluffy popover pancakes are an easy and impressive breakfast or brunch dish. Serve savory or sweet. Today we used lemon curd, kiwi, blueberries, and a sprinkling of icing sugar.

½ cup flour
½ cup milk
2 large eggs
1 TBSP sugar
2TBSPs unsalted butter
2 Pinches Kosher salt
Optional: ¼ teaspoon nutmeg
½ teaspoon vanilla extract

Preheat oven to 400F - 425F depending on your oven and preference.
Combine all ingredients except the butter and toppings. Blend in a blender or hand mix until smooth and runny.
Let stand for about 10 minutes to let the flour get fully absorbed.

Take an oven proof 10" skillet and melt butter. Once the butter is melted immediately add the butter and place in the over for 20 minutes.
Turn the oven down to 300F and let the puffy delight turn to a deep golden brown.
When you take it out of the oven it will fall and is supposed to.
Loosen from pan, add toppings and enjoy!

I have never been a pancake fan but love crepes. Recently, I have found the perfect combination of the two.
